Ingredients
- 1/2 cup (113g) unsalted butter, softened
- 1/2 cup (110g) packed brown sugar
- 1/4 cup (50g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups (150g) all-purpose flour
- 2 tablespoons high-quality culinary-grade matcha powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup (170g) white chocolate chips or chunks
- 3/4 cup (100g) roasted, unsalted macadamia nuts, roughly chopped
👨🍳 Chef’s Tips
- Use high-quality culinary-grade matcha for the best color and flavor. Ceremonial grade is not necessary and much more expensive.
- Toasting the macadamia nuts (if they aren’t already roasted) for 5-7 minutes at 350°F enhances their nutty flavor and crunch.
- For thicker cookies, chill the dough for 30 minutes before scooping and baking.
- White chocolate chunks or a chopped bar will create larger, more satisfying pockets of melted chocolate than standard chips.
Preparation
- Step 1: Cream butter and sugars. In a large bowl with an electric mixer, beat the softened butter, brown sugar, and granulated sugar on medium-high speed until the mixture is light, creamy, and pale in color, about 2-3 minutes. This step incorporates air for a lighter texture.
- Step 2: Add wet ingredients. Add the egg and vanilla extract and beat until fully combined, scraping down the sides of the bowl as needed.
- Step 3: Sift dry ingredients. In a separate medium bowl, sift together the all-purpose flour, matcha powder, baking soda, and salt. Sifting is especially important for matcha, as it tends to clump. This ensures the vibrant green color and earthy flavor are evenly distributed, preventing bitter pockets.
- Step 4: Combine and fold. Add the dry ingredients to the wet ingredients and mix on low speed until just a few streaks of flour remain. Do not overmix. Gently fold in the white chocolate chips and chopped macadamia nuts with a spatula until they are evenly distributed throughout the dough.
Cooking
- Step 1: Preheat and prepare. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Step 2: Scoop the dough. Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart to allow for spreading.
- Step 3: Bake until set. Bake for 10-12 minutes. The edges should be set and very lightly browned, but the centers will still look soft and slightly puffy. This is the secret to a chewy cookie. The beautiful green color will deepen slightly as they bake.
- Step 4: Cool properly. Let the cookies cool on the baking sheets for 5 minutes. They will continue to cook from the residual heat. After 5 minutes, transfer them to a wire rack to cool completely.
Serving
Serve at room temperature. Their beautiful color makes them a standout on any dessert platter. Arrange them with some space in between to show off their unique hue.
Storage
Store in an airtight container at room temperature for up to 5 days. The matcha flavor may become more pronounced over time.
